Recipes - Sweet Potato Mix

 

SWEET POTATO BISCUITS

For rolled biscuits:  Use four parts mix to one part liquid.

For drop biscuits:  Use three parts mix to one part liquid.

For sheet pan biscuits:  Use two parts mix to one part liquid.

Bake at 450 degrees for 10-12 minutes.  Brush tops with butter, margarine or substitute to keep soft.

 

SWEET POTATO MUFFINS

4 cups ADLUH sweet potato mix                                    

1 cup craisins or raisins (optional)

1 cup chopped walnuts or pecans                                  

1 cup brown sugar

1 ½ to 2 cups water, milk or buttermilk

 

Blend all dry ingredients.  Stir in the liquid until consistent batter is formed.  Grease or spray muffins tins or use paper muffin cups.  Pour batter into muffin cups ¾ full.  Bake at 400° for 12-14 minutes.  Turn the tray half way through baking.  Yield:  12 – 2 oz muffins.

 

JAZZED SWEET POTATO BISCUITS

3 cups ADLUH sweet potato mix                                    

1/4 cup chopped pecans (optional)

1 1/3 cups milk                                                                    

2 Tbsp ground cinnamon

½ cup light brown sugar                                                    

melted butter with honey

 

Mix sweet potato mix, sugar, pecans and cinnamon together.  Add milk slowly.  Roll out dough and use a biscuit cutter to cut biscuits.  You can also make drop biscuits with spoonfuls of dough.  Bake on cookie sheet at 400° (350° convection) for 10-12 minutes.  Brush with honey butter mixture.

 

FRUIT COBBLER

½ cup margarine                                                                

4 cups canned pie filling

1 cup milk                                                                            

½ cup sugar

1 ½ cup Adluh sweet potato mix                                     

cinnamon or nutmeg to taste

Preheat oven to 375°.  Melt margarine in a 13x9 inch casserole dish.  Mix the sweet potato mix with sugar and milk.  Spoon this mixture over the margarine.  Ladle the fruit over the top and stir.  Bake for 35 minutes or until browned.  Remove from oven and sprinkle with cinnamon or nutmeg if desired.

 

BANANA NUT MUFFINS

¼ cup butter                                                                         

1 cup sugar

2 eggs                                                                                   

2 bananas

1 teaspoon vanilla                                                              

½ cup chopped nuts

2 cups Adluh sweet potato mix                                       

1 cup milk

Combine all ingredients just enough to blend.  Pour into greased loaf pan and bake at 350° for about one hour or until toothpick inserted in the center comes out clean. 

 

SWEET POTATO APPLE COBBLER

1 ½ cups milk

3 cups Adluh sweet potato mix

1 cup sugar

1 pan Stouffers escalloped apples (cooked and chilled)

 

Mix milk, sweet potato mix and sugar until smooth.  Pour into 13x9 baking pan.  Add apples evenly on top.  Bake at 375° for about 35 minutes.  Brush the top with brown sugar and butter if desired.

 

PANCAKES

1 ½ c ADLUH sweet potato mix

1 egg

1 T oil

1 c milk or water

Combine all ingredients just until blended.  Drop by 2 oz ladle onto nonstick or sprayed pan.  Cook approximately 2 minutes per side or until golden brown.  Makes 9-10 4-5” pancakes.

 

SWEET POTATO APPLE COBBLER WITH PECANS

3 cups ADLUH sweet potato mix

1 ½ cup milk

1 cup light brown sugar

1 ½ cup chopped pecans

16-32 oz fresh, frozen or canned apples or apple pie filling

1 stick melted butter

Mix the sweet potato mix, milk, light brown sugar and pecans until the thickness of pancake batter.  Pour the apples/filling into an 8x10 or 9x13 baking pan.  Pour the sweet potato mix over the apples.  Bake at 400° conventional (350° convection) for 30 minutes or until golden brown.  Take out of the oven and pour melted butter on top.   Let the butter soak in then sprinkle with light brown sugar. 

 

 

SAD CAKE

 

ADLUH  Sweet Potato Biscuit Mix

   

 

   2 cups

 

 Pecans

   1 cup

 

 Coconut

   1 cup

 

 Light Brown Sugar

   2 1/4 cups

 

 Cinnamon

   1 tablespoon

 

 Ginger

   1/2 teaspoon

 

 Cloves

   1/4 teaspoon

 

 Nutmeg

   1/2 teaspoon

 

 Allspice

   1/4 teaspoon

 

 Cardamom

   1/4 teaspoon

 

 Eggs

   4

 

 Vanilla

   1 tablespoon

 

 Canola Oil

   1/2 cup

 

 

Grease and four 9x13 pan.  Heat oven to 350 degrees.  Parch pecans in oven for 4-6 minutes.  Grind nuts finely in a bowl.  Add sweet potato mix, coconut, brown sugar and all spices.  Fold together.  Add eggs, vanilla and canola oil.  Stir.  Makes a very odd play dough-like consistency.  Pour and spread into pan.  Bake for about 35 minutes.  This cake may fall if you mix it too much.  Top with powdered sugar or 1/2 cream cheese 1/2 butter frosting with confectioners sugar and vanilla and dust with spices.

 

SWEET POTATO WAFFLES

1 cup ADLUH Sweet Potato Mix            

1 cup ADLUH Pancake Mix

1 1/3 cups milk                                     

1 tablespoons oil

1 egg                                                   

1 teaspoon vanilla – to taste

 

Mix all ingredients and let stand for five minutes.  Cook on waffle iron at 350°.

 

SWEET POTATO CORN BREAD

1 ½ cups ADLUH Sweet Potato Mix      

1 ½ cups ADLUH Corn Muffin Mix

1 ½ cups milk

Mix all ingredients and pour into a 9x13 sheet pan.  Bake at 400° for 20 minutes.

 

SWEET POTATO HUSHPUPPIES

½ cups ADLUH Sweet Potato Mix         

½ cup light brown sugar

1 ¾ cups water

 

Mix all ingredients and let stand for 15 minutes.  Drop into 350° oil.

 

SWEET POTATO PEACH COBBLER

3 cups ADLUH Sweet Potato Mix          

½ cup light brown sugar

1 ½ cups milk                                      

1 stick butter, melted

42 oz. peach pie filling                                                  

Mix sweet potato mix with sugar and butter.  Put peach pie filling in bottom of 9x13 pan.  Pour the mix on top.  Bake at 400° for 40 minutes or until golden brown.  Remove and pour melted butter on top.
